We’re two triathletes who found the sport in different ways – one of us has always been athletic and was looking for a new challenge, the other had to find that inner athlete and got addicted to doing epic physical challenges – but we’ve both discovered how wonderful it feels to live a healthy, active lifestyle. Between the two of us, we have one Vitamix, two cats, five bikes and more laundry than we can count, and we’ve both been told we’re crazy – usually by each other.
We started Our Fresh Kitchen because we noticed that most healthy recipes tend to be overly complicated (pass the pink Himalayan sea salt and truffle oil, would you?) or just don’t taste that good (mmmm…plain broccoli and brown rice), so lots of people don’t like “healthy food” and don’t think they have time to make it. Our recipes show that healthy eating can and should be both simple and delicious, and we’re living proof: we both work full time, train 12-18 hours most weeks and make all our own meals with fresh, whole foods.

Have a seat, enjoy a nice hot cup of tea and let’s talk about food. We’re both triathletes, and just like anyone else, we want our food to support our health and activities so we can continue to do what we love. We both love cooking and spending time together in the kitchen, but we’re also busy with day jobs, family and friends so it’s no surprise that we’ve figured out some easy ways to make healthy food without spending hours shopping for and preparing every meal. Unfortunately, we found that a lot of really good recipes call for ingredients we just don’t have – things like pink Himalayan sea salt and avocado oil – and while we agree that pink Himalayan sea salt has a lot of health advantages over table salt, we realize that not everyone has it in their cupboard or wants to make a special trip to Whole Foods just so they can make some brownies.
Our Fresh Kitchen is all about making healthy, uncomplicated food that actually tastes good. Yes, there are healthier recipes out there, but living a healthy lifestyle isn’t about being perfect and we believe food is meant to be enjoyed too. We choose to eat a diet that focuses on whole, plant-based foods, so many of our recipes are based on ingredients like whole grains, fruits and veggies, legumes and fish, but we do indulge in an unhealthy treat every once in a while and like to share those too.
Many of our recipes can accommodate a variety of dietary choices, like gluten-free, nut-free and vegan, either through substitutions or by creating recipes that meet the restrictions of several diets; we have several friends who aren’t able to eat gluten, family with food sensitivities to nuts and Kim recently adopted a vegan diet, so we have a lot of incentive to find foods that everyone can eat. Even if you don’t have any dietary restrictions, working with different ingredients is a lot of fun and brings more variety to your diet – you just might discover you love a food you’ve never even tried.
