I’m getting hungry.

I’ll spoil the surprise for you: I finally made that perfect crust. It was delicious and crispy, and we topped it with the most delicious homemade tomato sauce, veggies, caramelized onions and balsamic reduction. I assure you, despite sounding complicated, this pizza is actually easy to make and it one of the only times I’ve ever considered making the same pizza twice.

Keys to Making the Perfect Crispy Pizza Crust

One of the staples of pizza-making is a hot oven, and for this one you’ll want to turn it all the way up – 500F if your oven will go that high.  We use a pizza stone to get an even crispier crust, but you can also use a regular metal pizza pan, or even a baking sheet. If you’re using a pizza stone it should be placed in the oven to preheat.

When the dough is ready, remove the pizza stone from the oven and brush oil over the surface. Pour a small pool of oil in the center, place the slightly flattened dough ball into the oil and use your fingers to start spreading the dough out into a crust.  Be careful because the oil will be hot and might spatter.

The stone is very hot, so once the dough gets thinner, use a rolling pin to press the dough out to approximately 12″ in diameter.

Place the crust in the oven and bake for about 5 minutes. The crust should be lightly browned on the top and crispy on the edges. Add your toppings and bake for another 10-15 minutes, then serve hot.

Ingredients
  1. 1/2 cup all purpose flour + more for dusting
  2. 1/2 cup whole wheat flour
  3. 1/2 teaspoon instant yeast
  4. 1/4 teaspoon salt
  5. 1/4 cup water (approximate)
  6. 1 tablespoon olive oil + about 1/2 tablespoon for pan
Instructions
  1. Preheat the oven to 500F or as high as it will go, and place a pizza stone in the oven to heat.
  2. Mix flour, yeast and salt in a small mixing bowl. Add water and oil, and stir as much as possible (add a little extra water if the dough is too dry to incorporate all the flour). Turn out onto a lightly floured surface, dust with just enough flour to keep the dough from sticking and knead for about 5 minutes. The dough should be a smooth consistency, moist and elastic.
  3. Shape into a ball and let the dough rest for about 15 minutes.
  4. When the dough is ready, remove the pizza stone from the oven and brush oil over the surface.
