Substitutions

With so many dietary preferences and restrictions out there, we couldn’t possibly make every recipe work for every diet.  Fortunately, many recipes can be tweaked to make them lower calorie, dairy-free, vegan or almost anything else you can think of.  Although we’ll only be covering the more common substitutions here, the internet is a great resource for finding specific ingredient substitutions we may not have mentioned.  Google is your friend!

When using substitutions, it’s important to understand the purpose of the original ingredient so you can make sure the substituted ingredient serves the same purpose.  For example, bananas may be used to replace eggs (which typically hold baking together and provide texture) or sugar (which often makes the food sweeter or helps yeast rise).

Kim
